I'm planning on using one at Gospic and one at Smednik and that's Slovenia (which only has two chargers according to Ionity ?).

The Sport mode is always available.
PSM Sport Mode is a more relaxed mode of the stability control.
It allows more wheel spin and more sideways action.
But it's still active to save your butt - other than in PSM off.
It's not just three phase or not. Three phase cables come in 11 kW and 22 kW. You need more copper for 22 kW and the cable has an identifier, so the charger can tell it's only rated for 11 kW.
In Germany there are more and more reports of things getting fixed but without any message.
It just works again.
