Remote climate control still works without Porsche Connect. It's right there in the app.

That piece is quite easy. I replaced the armrest a few months back to one with a logo.... absolute nightmare! 1/10 do not recommend! The cupholder is relatively easy. You just have to pull upwards on it like your life depends on it and it'll come off. See here.
