I'm currently working on retrofitting Burmester to taycan and as a part of kit I got used Burmester AMP which has component protection. Dealer refuses to remove it saying:

1. This car didnt have Burmester originally
2. They do not remove component protection on used parts

What are other ways to remove component protection?

You need someone with a PPN account. The virtual tester can also remove component protection.
It's possible that you can find someone online offering to do that remotely.

So far I saw some shady Chinese sites offering it, but I dont really want to even ask them. Anyone specific you have in your mind?

No, I do not have anyone specific in mind and the shady Chinese will probably get it done. As can any other workshop with a PPN account.

I don't know what the legality of this is, but in many parts of the world it is illegal for the dealership to refuse to remove CP.

As long as the parts are not from a stolen vehicle, they have to do it and it's none of their business why you need it.
Either way, search for an aftermarket Porsche specialized shop that has a PPN account or go with the Chinese, who will also be able to do the job.

Oh and @ct14garage here has full OEM PIWIS setup, you can try asking them if they can help you remotely at all.

How do I prove them they aren't stolen? I bought AMP off eBay, but not sure if thats enough for them?
Also they refuse because its used part(they can install new AMP with no problem)

If it's stolen it will be in the Porsche database marked as stolen most likely.
