Hard to say anything… I spent almost 50k€ on options for my CT4. my build was 147k, and I guess that you know what you are looking for, so I can only say: congrats & I wish you fast delivery.

There are lots of different opinions on this.
For me the only must-haves are: exterior color paint other than black, other wheels than the standard 19" and adaptive cruise control. All three should have been standard in my opinion.
You included all three, so your build is fine for me. I can almost buy my configuration 2 times with your budget.

The mamba green it’s a bold move, but I love green cars, my jag xjs v12 on british racing green as been the love of my life! I think the silver rims give a nice contrast and the fact they are a size smaller than the other ones I think it gives a little more confort. I’m very doubtful about the Innodrive, does some one have it? The second display it’s just an esthetic decision and is also to keep the wife busy with some Maps, they love Maps ?. I’ll get the normal leather which comes with some alcantara roof and wheel, which is enough. I’ve been adviced to get the 4 wheel steering for parking/low speed handling. The roof is maybe very useless but I just love it. do I Miss something? Are some options really worthless based on your experience?

You went cheap on the wheels. Bad move. Spend 2k on decent wheels. The selected one are not good.
The panoramic roof is a waste of €. The front passengers never benefit. Spend on wheels instead.

My Italian is a little rusty but I didn't see...

Rear Assisted Steering for those tight Italiano streets and parking in gaps 1ft smaller than the car
Might want to get the 150 onboard booster since Tesla is opening up the network. 150kwh is better than 50kwh
Whatever the option is that shows cars in the blind spot (flashes orange) on the wing mirrors
