This sometimes happens while the watch app is updating. Check the following two places to see if that's what's happening:
1. TestFlight app on your iPhone > Electric Sidecar > "Show App on Apple Watch". This will show a spinner if it's trying to update your watch.

There is a virtual keyboard but it’s definitely not worth trying to use for coding. In this video I’m using my MacBook Pro keyboard to type onto the projected screen.

The iPhone app works pretty well as-is without any modifications. Very clearly some opportunities for improvement here, but I'm excited to start playing around with the potential here :)
I haven't been able to test Electric Sidecar with an account that has no Porsche Connect service yet. If someone in this thread has not renewed but would be open to doing a quick install of Electric Sidecar, I'd love to know what works/doesn't work so that I make sure the app handles that case...
It's not super close, but if you're willing to drive up to Ojai / Santa Barbara there's a couple roads that are particularly worth checking out depending on what you're looking for. E.g. there's an area of the 192 in Santa Barbara that is just pure turn after turn for 4-5 miles and it's a blast...
