I kinda regret not getting the Bose (the base audio is so so bad) and I also regret not getting ACC.. but I still have a Model S with an awesome audio system and autopilot..

I'd say spec as you want, but what you don't spec.. you can never ever add!

Suppose it also depends on how long you want to keep the car... when you switch every few years.. it's easier to just skip certain options and if you seem to miss em, spec em on the next car

A nicely specced car will hold it's value better than something that's practically the base model.
I don't think this is true, at least in the USA. Most used car values here are heavily based on base trim. Even when you use more sophisticated estimators (which wholesale used car dealers do not) you will find that only some options are considered and even those options depreciate at a significantly higher percentage than the base trim price. So any way you look at it, a base trim car has the least depreciation.

A quick way you can verify the above is by looking at lease residual values by the way. Leasing a 4S + $27,600 in options is more expensive than a no option GTS, even though they have identical MSRP (in the USA). This is because the GTS will have a higher residual value (i.e. predicted future value). If you look at the formula for residual values (some dealers will show it to you) it is always "the base trim MSRP * x% + options price * y%" and y is always a lower percentage than x (meaning options lose value quicker). Is the residual formula radically different in the UK?

It's terrible - as I have mentioned here numerous times. Bose in the Taycan is very good Porsche Bose.

As most mentioned, I would get some options added onto the car and focus on the residual resale value OR if you plan to keep it forever, options that you know you would not regret having as replacing a car is much more expensive than just getting it right the first time.

For resale, as long as you don't go off the wall with a weird combination of colors or options then it'll have enough buyers to be desirable. There is still some stigma for most people to purchasing the 'stripper' model and it'll manifest in the trade-in or sale price down the line.
