On my PEC - the pro driver who took me around the track for one lap and really did make me realise how "basic" I am at driving - explained upgraded brakes are cosmetic and PDCC is not really worth it.

For someone who drives the Taycan regularly around the track, that's good enough for me to not spec either where I will only be driving the car on the road.

If money is no option then option everything.
Actually when you get your 2 year service you should get a report on your pad wear - it may well surprise you and be more than what you might have imagined working on the principal that the motors do the majority of the braking.

The biggest additions are the full Sports Design package (I'd rather not have it) and PTV+ thereby boosting the price. It also has the same motors as the Turbo which may open the door to more power in the future (doubtful).
I don’t like any carbon non structural cosmetic additions on principle!
I did like the Alcantara and leather GTS interior, apart from its blackness and no ventilation or massage seats.
I didn’t want the stiffer suspension or faux sound.
Overall the ST GTS spec I came up with for me was about £6k more than a CT 4S for a car suiting me slightly less, so a no brainier for me.

Indeed.

The carbon is a further cost on top of the SD pack for which there aren't many takers.

If you have really nice roads where you live go GTS. Otherwise 4S is the better car to live with.
You know what? I know the SA didn't want to lose my 4S sale and put me back on the list, but he did remind me of our Michigan roads... they're some of the worst in the whole country. He warned me that the standard sport suspension doesn't take kindly to our roads. So good catch.

One thing to consider is value retention if / when you come to sell or trade in the future.
The 4S is an excellent car, but you're going to take a bloodbath on all those options.
A GTS will keep more value as a good number of options are standard, so it'll be (technically) lesser specced, and therefore less of a hit.
Just something to also consider.
Considering I'm buying a pink car, with purple interior, and wood accents, I stopped worrying about resale value a lonnnng time ago :D. And I LOVE IT!!!!!

If you need a GTS allocation, my SA has one...
