You'll most likely have slow speeds at the beginning / end of long trips, reaching / leaving highways , traffic and road works, at least in europe.
I have similar average speed on long (1400 km) or average (700 km) trips,
although driving at higher speeds. But going faster decreases overall...
I had a look at other forums (Kia, Ford) about the SoH the BMS delivers. It looks like this State of Health (?) is more a State of Homogeneity (?).
My experience : SoH was at 90.3, did 1000 mi on DC, it went down to 90.2. I then charged from 70% to 85% (AC) and it went down to 88.8% right after...

i never paid attention to range on an ICE. I don't do it with an EV.
more important is the % of battery left (or gas left)
similar procédure: I went down to 9%, let it rest for the night, charged it to 100% the day after (AC 22kW) in 4hr, unplugged it and took it back 7hrs later.
SoH went from 88.9 to 90.3 [68500 km]
I didn't see much difference on the cell voltages before and after the 7hrs

I have also a (very) small fridge that I used last summer. if you plan to stop 1hr, the 30mn will be fine, it'll keep it cold.
If you need more time, I would suggest an external battery like the Blackvue. I have one for the dashcam, where I plug the fridge for long trips
I have the same configuration but there is no way I can reach 400km at those speeds. Consumption is around 22/23 kWh/100km in summer, so more like 300km if I go from 100% to 10/15%
