It's a sports car. So, that's where priorities should be; drop the weight, as we don't need 900km of range or something silly like that. Make it atractive up to 500km sports package. Those who want 1000km should get Panamera EV, once it's out 🙂
Three phases are out of the charger too. CCS2 supports three AC phases (unlike NACS). Again, re-read OP's post. It worked, stopped working and doesn't work on any other 11kw charger.

Not exactly. OP has three phases, which should deliver 11kW (16A per phase). And they clearly had it charging at 11kW. If it dropped to 7,2kW that does indeed sound like OBC is not utilizing one of the phases.
OP, if I were you, I'd take it to the shop. Maybe it's just a fuse and maybe OBC broke.

I just got a Macan without thermal glass. That was a mistake. Taycan with thermal glass is much more enjoyable place. I don't notice the sun at all. While in Macan... uff... it's hot.
Just configure the car to heat up/cool down the cabin every other day. When it does that it connects HV and 12v can recharge during that one hour. This has worked well for me on multiple VAG EVs.
Keep in mind that garden lights line are at best 2,5mm^2, and usually 1,5mm^2. 2,5 would limit you to 20A, which is not great (up to 3kW).
