I have driven all 3. The 4S with the Performance Package option is all any rational person needs. Then again, spending over $100,000 for a car is not rational, so why not spend $30,000 more for the Turbo.
Rear wheel steering is a much higher performance priority than Sports Chrono (which on the Taycan is more of a gimmick than a performance enhancement).

I'm about to leave my 4S for a month as well. Checked with the dealer who suggests keeping the charger connected and set the max SOC at no more than 85%.
You need to have registered the car in your My Porsche account, have turned on Porsche Charging Service, and have a credit card on file. Once this is done, per the Porsche representative I spoke with, EA chargers should automatically recognize a 2021 Taycan.

All my reading suggests that we stick with max 85% charge unless more miles are needed for a road trip. Suggest you search for "ev battery degradation" information.
Replaced a 911 convertible with a Taycan 4S. I also sold my CL550 so the 4S is now my every day driver. Miss the open air but not enough to have any regrets. The Taycan is 5000 pound 911 on the road. A pleasure to drive every day.
