I have to fill £60 of petrol into my S500 pretty much every 10 days in city traffic for an approx 50% full tank for a 12 mile round trip to work 4 days a week, with a very light right foot.

It’s certainly a head turner, but the price? Looks like it will start well above the price for a Turbo S at £180000 (200000 Euros) without the options, which is Ferrari territory. More rarified market, only 2 doors, and in that sense aimed at different people.
I cannot see any new configurator here in the UK going through the Porsche UK website.
With the prices of some extras, it really should be called the Go-Figure-ator. After the prices on each spec item, it should state "Go Figure" as an alternative to "Configure".

I looked at the Paldao wood interior when configuring my Turbo.
My current S500 has cherry wood details on the doors and fascia which suit an S class perfectly. I personally don’t think wood suits the Taycan at all. It’s more sports car than club lounge.
I would be cautious about ordering a facelift Taycan at the moment.
