Agree it is annoying. Hopefully it can (easily) be rectified in a future update.
Strange as well that you cannot save regen, not even in individual.
Car is fantastic. Software has a long way to go.

They are (extemely) desireable, fun to drive, can be all-arounders.
Whenever next gen batteries (solid state, 1000km-ish range) comes along - this gen taycan will be old news. Until then... I'm keeping it (aiming for 10 years ownership!)
I have done it. Not at the car now, but I believe once you're in camera mode, one of the icons on the left side is to change point of view. There is - I know because I did it. I did change it back, though.
"Minimum charge". It will charge to this as soon as you plug in and authorize the charge.
After that - it continues to charge unless there is any other instruction (timer for instance).
I just use timer, that's it. And direct charge when at Ionity.

The amount of capacity is displayed on "technical specifications" on Porsche configurator:
So yeah, charge to 100% and you still have 10%-ish left for battery safety.
Still, Porsche recommends (as per the manual) to charge to 85% for daily use.
They also state that charging to 100%...
