I have chosen the 18-way seats and the 4+1 seats in the back for my locked MY21 build.

OK, you are right! I hadn’t seen it like in that video before. But still the look and feel from the Cayenne active parking assistant is identical to the one in my e-tron. And that is why I expect to have the same system in my MY21 Taycan. Again, no idea which one is really better...?!
No, then maybe my description was misleading. The way I experienced it and saw it in lots and lots of YouTube videos of the MY20 is that you can only view the car from six or eight predefined angles by clicking on the camera icons beside the CGI car.

Judging from pictures and videos of the active parking assistant in the Cayenne the „look and feel“ is identical to the system I had in the Audi e-tron, but different to the one I experienced in two Taycan demo cars I drove.

If production is starting for you on 8/28 then I’m pretty sure you will get a MY21 as I heard from several sources that in general production of MY21 Taycans will begin after the summer holiday shutdown in the plant at Zuffenhausen.
My dealer here in Germany also told me that this coming week the configurator for MY21 will come online and I could come in to sign the updated papers. My build has been locked though already based on the dealer's configuration tool. Expected vehicle completion (CP8.0) is Sept 25th.
