Called my preferred local dealer and gave them my VIN, service advisors response was "That Taycan has no open recalls, we can't help you."

I was having similar trouble with profiles, and a few members here suggested I use a timer only, no profile. It has been working perfectly.
Set a timer with your target SOC (mine set to 80%), and the timer for the end of your discounted rates (mine set to 5:30AM).

TLDR: The 10 AWG cord is not optimal at 40A, but it is electrically safe.
NEMA 6-50, 6AWG to 50A breaker, PMCC with no cabinet. Barely warm when pulling 40A, never thrown an error. 90F+ here this week.
Maybe those with trouble should consider a switch to NEMA 6-50 and see if it helps.
You’ll notice Porsche doesn’t provide instant consumption on any of their ICE cars either. I find it refreshing compared to BMW and others that have multiple displays and menus with overanalyzed efficiency data.
I tried range mode once and noticed an indicator on the instrument cluster that showed it was raised. Haven't ever seen that in normal mode, or maybe I just haven't noticed. I think it may deploy sooner in range mode.
I notice it's a little firmer in low, like you say probably due to reduced travel. Really marginal difference though, still rides excellent overall.
I find I can only activate lift at 20mph or less which is fine for my needs.

As you can see from my OP, my profile/timer combos were causing charging at random times, outside of what I specified. I understand their purpose, and how they "should" work in combo, but my reality was a haphazard charing schedule. Very likely a bug.
So I did what was suggested by @NC_Taycan , no profile and just timers for 6AM and 8AM. And it worked, until it didn't!
The car didn't start charging till 4AM, and charged to 80% SOC right around 6AM. Great!
But then it randomly continued charging after 6:30AM until I realized and cancelled it...
