I am driving an F82 right now and the RWD is definitely slow in comparison. My wife is ordering the 4s and she felt the RWD was just too sluggish off the line. She felt quite strongly on why paying $100k and going backward.
Btw, G82 is a better car than the F82. I am struggling to decide to get a G82 AWD or 992 GTS. 992 is definitely a better car but the price difference is close to $70K.
Man your wife is awesome ! My fiance actually doesn't like the taycan. She says it's too big for her to drive. She has a f80 m3, but she wants to get GT4 now since I might sell the M4. We won't be that M couple anymore hahah.

Honestly I'm hoping that the taycan will allow me to start driving more carefully, possibly force me to grow up mentally. (Turning 32 in 2 weeks) The M4 on full e85 gets me into too much trouble. But yeah, only reason I ordered the RWD is because I get 20% off. Not on the higher models though. After options I'm already at 105k. Not sure if it'll be a noticeable difference between the performance and performance battery plus. I opted for the 79k at the moment.

I have had my taycan rwd for 6 weeks and 1800 miles, def been dialled back on the initial 0-20 mph as its damned near impossible to light the back tyres up even in the wet,but after that she doesnt hang about for sure, more than quick enough,im sure you would be looking at a mid 4 second 0-60 on the rwd,but that would be too close to the 4S,i have the 79kw battery as i have podpoint at home and chargers at work for my 40 mile commute,so was really no need for the battery upgrade, and at 2010 kg weight, its a chunk lighter than the battery upgrade, and a big chunk lighter than the 4S. Im convinced you will see the taycan 'S' i crave for in the near future, that i feel would be the standout drivers car of this impressive taycan range.

I understand your rational about the discount and all. I would see a F82 to a Taycan RWD a downgrade on performance. As long as you are prepare for the downgrade, I think it will be fine.
Btw, I am a much older guy than you and I don't believe a car will do much on growing up or not. It is important to get something that you love and enjoy. Life is too short.
