I’ve read that when a Taycan is new or the brake pads have been replaced the car will used the hydraulic brakes (more) to bed in the pads. So I’ve just changed the rear pads and rotors and I wondering how to get the car to start this bedding in process?

Usually, to bed in brake pads, you drive at about 70MPH and then jam on the brakes to almost a stop (don't stop all the way and don't let the brake pads "sit" on the rotors), then reaccelerate. Repeat the process 5 times. Coast to let the brakes cool on final pass. Given the technique, I would think the conventional brakes will activate without having to tell the car to override the regen brakes.

Sure I've done that many times in the past but I'm wondering how the dealer does it when they swap out the brakes. Apparently the Taycan has a way to automatically accomplish this.

After 6h of being parked, when driving at low speeds, the car engages the brakes slightly to clean off the brake discs. It;s an automated procedure within the car.

I would suspect porsche dealers can trigger this on a dyno.

Maybe not 100% related but when I had my brake hoses replaced my dashcam saved a clip from "an incident" ... so I watched it and it was the tech who did 2 or 3 emergency-stops. When he got back in the workshop he asked another tech "so braking to a stop until the hazards come on and it's all good, right?", the other tech confirmed that was it.
I'd estimate he did some 0-50mph-0 runs

You can find an indy shop in your area that has access to PIWIS who can enable it for you. I'd assume it's a maintenance item in one of the ECUs. It would still be beneficial to do a proper bed in procedure even with regen off during that time.
