Collision avoidance sensor too sensitive?

I have 2k miles on my 2021 4S, and loving most everything except for the collision avoidance safety feature. If I attempt to turn left across traffic, and the approaching (and now out of the way car) isn’t completely past, the car will warn and stop suddenly. Not only does this make it unsafe for me, as it’s now a few seconds before I can go again, if there’s a driver behind me also attempting to turn, they’ve just run in to the back of me.

I am not cutting these turns close in any way, and I am not pulling in front of a car. This happens when I turn after the car has gone by.
Anyone else have this happen? I am sure the dealer will tell me it’s normal…it’s not.

For the record, I have both collision settings set to “Regular”. Turn assist is also enabled. I may run with turn assist off and settings at “Late”, but that seems pretty lame that in order to drive normally, I have to disable or diminish safety features.

There is a bump back bridge near me in the middle of an S bend.

The car does jump to collision warning every time I drive over it (both ways) less going very slow.

I will need to have a look at the settings for it - as not done that yet.

My warning is set to "late" and it's not very sensitive at all.... the warning comes very late and I don't think the car would have stopped in time if I didn't slam on the brakes myself...
