Judder from tyres when cold

The presence of Rear Axle Steer (RAS and not rear wheel steering as mentioned by others) is irrelevant. Cold tyres (Pirelli for example), cold ambient 21" +, damp surface, full lock, and so on you will experience it.

I've had RAS on both my Taycans 20" (Michelin) and 21" (Pirelli) Ackerman is present and more pronounced on 21".

My Boxster S (20" Pirelli) had it and my 911 (20" Pirelli has it).

My Macan T (20" Pirelli) doesn't present with Ackerman at all.

My current NF0 Pirelli’s do it horribly in any temperature under 8c.
When I had Hankook Ion Evo didn’t have Ackerman effect once.
Does bother me that though.

You shouldn't be running the stock summer Pirellis in that weather: they'll have next to no grip and you risk smashing the side walls as they won't flex properly.

Are the Hankook NF rated on 21" size?
as far as i can see the 305/30ZR21 is not..

They are not rated on 21"... but they work fine, and they are in spec from load index.
