But doesn't the specs marked shows they are similarly equipped? And any idea how to generate a sticker or options, or should I contact the dealer for that?
Difficult to compare without full information since there is Standard Equipment for each then Option on top of that. Ideally need Window sticker for each to be absolutely sure on the config of each. Dealers should provide it at no cost.

Tough call but the Turbo S will be a launch car so first release and the Turbo some 7 months later.

Both are desirable and have all the gadgets.

Drive both and see what you think.

Note.that the range figured are WLTP so take 30% off for a little realism.

2 yr warranty so nothing to worry about.
Was the Turbo S just released at that date? And if so, does that mean it might have some issues?

At the current price range, any preferences? Specially Turbo has a bit more features while Turbo S has the stronger engine.

Lastly, does the reselling of Cherry colour would be more difficult?

Launch vehicles were Turbo and Turbo S
Both have the same engine setup and performance in normal driving.
Turbo S has a bigger inverter (600kW vs. 300kW) that makes it only faster in Launch Control mode.
This is not just a regular White, it is Carrara White Metallic and no longer offered, making it unique and more desirable vs. Cherry although Cherry is also no longer offered.

My vote stands: Turbo S.
Just noticed Turbo S has Rear Axle Steering as standard equipment where the Turbo does not.
Turbo has the 22kW charger that is known to fail vs. standard 11kW.

Does wrapping a car to change its colour easy to remove later on?

No way to avoid the battery warranty cap of 8 years and 100k miles.

I have 14-way with massage and prefer it to 18-way.

11kW is the onboard standard AC charger for home and that is all you practically need. 22kW is a rare option and requires a 100Amp home circuit in the US. This has nothing to do with DC public charging.

Wrap is more practical than repaint.

Earlier cars always have issues but being a Taycan it was predominantly software related and impacted all cars up to present.

Cherry was not a popular colour.

Carerra White Metallic was popular and now not available.

22kW onboard AC charger is useful but highly unreliable for many who optioned it and most will have been replaced at least once.

On the road you will typically use DC charging for speed.

The motors are similar and software tuned for limited higher output on the Turbo S.

Personally 2020 early I would skip white I would skip and cherry I would skip.

If not in a rush wait a while longer for more options.

11kW is standard on all Taycans and 22kW was an expensive option (£1500) that proved unreliable and no longer available.

DC charging is what matters and both cars can charge up to speeds of 270kW and both additionally have the 150kW DC booster option which means you can leverage 400v 150kW DC EVSEs (without it you are limited to 50kW, higher output EVSEs are 800v which is the native architecture of the Taycan)

AC is predominantly for home charging and as a last resort public charging.

Wrapping is easy to remove but consult an installer.

14 / 18 way great seats but once setup you won't adjust. The bonus is that you get electric steering wheel adjustment.

P&C only works at Ionity EVSEs in UK currently so no great loss - I've never used it as it can be slow to initiate a charging session - using the Taycan RFID card is quicker. P&C featured on MY21 onwards.

Production started in 2019 and on sale 2020. First cars probably landed in UK end Q1 2020.

How long will you keep the car for?

8 years for the battery from new is reasonable and I'm pretty sure will be going strong long after that.

I think I explained above re Model Years (MY)

MY20 = 1/8/19 - 31/7/20
MY21 = 1/8/20 - 31/7/21
MY22 = repeat...

MY brings updates / enhancements - not often visible

Why not ask the dealer what model years both cars are (it's really that simple)?

The Turbo S says 'new Sep 2020' and first reg 10/9/20 ( PJ70 PXT ) that would imply MY21 but if manufactured in June of that year then it demonstrably will be MY20.

The Turbo was first reg 23/4/21 ( VX21 WNL ) and can only be MY21.
