tl;dr: if you're having trouble connecting to CarPlay wirelessly, double-check that "Auto-Join" is enabled for *both* of your car's wireless networks in your phone's Settings app.

I just got back from a trip and much to my dismay, my wireless CarPlay stopped working again. Connecting via cable worked, but wireless CarPlay is just way better. So I connected Console to my iPhone and started observing the device CarPlay logs.
After watching the stream for a bit, I noticed that my phone had detected that it was in the car, but that it was stuck in an infinite loop trying to connect to the car's wireless network. Looking closer at the logs revealed that my iPhone was detecting the car's wireless networks but intentionally ignoring them because they were disabled. Sure enough, at some point I'd apparently set the wifi networks to not Auto-Join, and CarPlay unfortunately respects this preference when trying to find your car's CarPlay network.
So I opened Settings > Wi-Fi, and then tapped the (i) button for my Journey and Journey_5GHz networks and enabled Auto-Join. Tapping the CarPlay button my PCM and voila! Wireless CarPlay working beautifully again
