If it's a stickier summer tire then it has more friction. The only time that could be the case is if you aren't getting them up to temp. But the tire that OP posted is a 240tw. It's going to wear way faster than an all-season with everything else being equal because of the added resistance.

It's all about rolling resistance. Summer tires are stickier, therefore they take more effort to turn over. It will impact your range due to the compound alone.
I know in BMW land at least, they try to match you with what you have.
If you have an M3, they put you in another M Car.
If you have an SUV, they put you in another one.
I think it's dealer dependent, but there's definitely a strategy to try to get you interested in a new car.
I'm also curious to hear a comparison. I just test drove a used Taycan Cross Turismo at one of our local Ford dealerships, and they said someone traded it in on a Mach-E. I couldn't imagine why.
Looking for a used Taycan. Closer to Cincinnati the better, but not afraid to travel for the right spec/deal. Most likely limited to 2020-2021 due to budget. Let me know what you have and price please
