I am curious on that topic being tested on battery-swapped cars.
Too late now, but I would've at least try a reset by disconnecting the 12V battery.
Also could've tried to reset the error messages through OBD from the tire-dealer.
All in all a very unlucky plot here.

Coming from 2 Model Y, Performance and Long Range, Taycan is quite a different cup of tea with air-suspension.
It succeeds in flattening out anything in normal mode.
But the OP question about vulnerability of the rims while doing some gravel or off-road with a Taycan can be resolved with: both...
