Max G-Force recording

see attached
i saw a youtube video
how come his g-force meter doesn't return to zero

i didn't know you can record your max g-force
anyone know how to set this up?

Press the button the right side of the steering wheel to select the left tube. Then roll the wheel/roller (without clicking) on the right side of the steering wheel to select the g-force display. Then click the roller to get the menu to switch between max and current g.
