Congrats! Obviously subjective, but curious about your thoughts on Chalk vs Ice Gray now that you've had first hand experience with both, given they're somewhat similar.
The exterior color makes it difficult to sell. Not every one appreciates Cherry Metallic.

Air suspension
Performance battery plus
Rear axle steering
Full leather interior
The cheapest I can find...
Obviously personal preference, but iiuc the regular e-tron comes standard with roof rails, something I never use. Wish it was an option like Macan/Cayenne/Taycan CT/ST.
Have you considered the Sportback variant? Looks better imo.

Cali is head and shoulders above the rest of the country when it comes to EV Adoption. Weather (range) and wealth are two main factors I suppose. You can easily find a similarly spec'ed CPO Taycan from a different state, have it shipped to Cali, and still save a few grands, compared to buying...
