So one thing I will point out is that RF testing occurs for all the in-cabin electronics. That includes both the interference and energy they radiate AND what interference they experience from the HV battery system and motors.

It takes a lot more RF energy to mess with a human than it does most automotive electronics. So you can have some indirect assurance that you're not experiencing any insane EM fields.

plus consider the voltages are quite low by comparison to say, power transmission, radar, radio towers etc

A good few years ago I had to do a presentation at the Dutch Main TV facility .. Middle of no where in Holland .. huge 200M tower over our head. Our host asked if I had a wireless mouse my PC .. which I did, they gave me a wired one as the wireless one did not work due to the tower emissions :CWL:

I would also think that if this were a risk, it would be a risk simply from driving anyway, since the rate at which the car depletes the battery during driving is so much faster than the rate at which it charges.

I charge several times a week in supercharger (+/- 20 min). I take the opportunity to process my emails. I wondered about radiation during charging while staying in the car.
About the same radiation as when you drive it! I suspect a lot less than if you went for that walk outside.

I would hazard a guess that the OP was referring to electromagnetic fields and exposure when he referred to "radiation?"........

far less of a concern with little to any factual problems - I'm much more comfortable with electricity than I am with petrol chemical emissions while filling up and driving around town

gasoline/diesel from it's extraction to it's burning is a nasty bad expensive and health risking affair - and not any fake news with less than stellar correlation - the facts of health issues due to the production and consumption of petrol chemical is well known, well understood and indisputable and is causal vs. weak correlation

sit in your EV during charging - it's much healthier for you than breathing the fumes while sitting in traffic with 100's of vehicles idling around you.
