I have Cross Climate II's on my Cayenne here in Upstate New York, and I love them.
They are great in all sorts of temps/weather, and are quiet and very compliant with the suspension...like having a great pair of running shoes.
Seconded.
I have the CC2 on both my 4CT and my A6ar. Sure feels like a winter tire when driving up the snow-covered access road to the Cog to backcountry ski on Mt Washington, and like a good all-season tire on dry roads.
Only hitch is that for the Taycan staggered setup it's available only in the 20".
My used Taycan originally came with 21" but I found a 20" Taycan owner through this forum who wanted to swap, so the selling dealer swapped the wheels even before my Taycan was transported to me.
I then sold the summer 20" tires (for very little $) to another person on this forum (in-person, although shipping tires is actually pretty easy).
If your Taycan has 19" then you might be able to sell them to a forum member who is looking for a separate setup for winter.

You have to be careful if you have PSCBs as you need to screw in a pin before removing the wheels to slide off safely without damaging the discs. I would not trust a corner shop to do it if they are not aware of the procedure. PCCBs require 2 pins to be screwed in before removing the wheels. Manual states exactly how to do it. I did it myself once to repair the wheel and it is not hard to do with the correct jack and torque wrench but not worth the time if it can be done by the dealer for $100.
I read the manual's section about the pin. Did the car.come with the pin?

drove on my summer tires this afternoon at 30F, and they didn't shatter.
I never said they would shatter. I said that at temperatures below freezing, some of the soft compounds become more brittle and can start cracking internally, which would weaken the tire structure. You driving on summer tires at 30F is not going to have zero traction. Heck, you could drive on just rims and still have some traction, especially on dry pavement (check out some police chase videos online). I used to hobby with RC cars. Sure, you could put hard plastic tires on them and still race around the street, but putting rubber tires significantly changed how they accelerated, turned, decelerated. When you drive on summer tires at 30F however, your stopping distance from say 50mph is significantly increased, even more so in snow or ice.

I read the manual's section about the pin. Did the car.come with the pin?
I have not looked, but I would bet it does not come with it since there is no spare tire and jack included with the car. I used 2 pins since SUVs come with one each.
