When I first bought the car, after parking and pressing the Park button, I would open the door handle to get out and the car would turn off automatically including instrument cluster, music etc.

After a recent service, now opening the door handle doesn't do that anymore. The car stays on, screens stay on, music stays on.
I either have to press and hold power button to shut down, or get out and lock the car with the keyfob and then it shuts down.

Is there a setting I can change to restore that door handle - auto off feature I initially had?

I'm used to getting out of our Tesla and just walking away. I leave the Taycan powered on and unlocked all the time by accident.... :(

Are you sure you want the car to turn off by itself just because you opened the door? That is not a feature I would want. Too many time that I need to pop open the door for few seconds or minutes. If the car turned itself off I would be annoyed - especially with the PCM startup time.

My 2021 stays on after the door is opened. If I close the door and lock the car with the key fob, it will eventually turn itself off (I don’t know how long that takes), but not right away.

have you tested key fob proximity wrt auto-off after locking?

Leave the car on, exit, close the door, lock with the fob: car turns off
Leave the car on, open the trunk, exit, close the door, close the trunk with the lock button: car turns off
