I've been looking to purchase the Taycan GTS for a while now.
I know that the Taycan GTS is super fun to drive and very comfortable.
If I'm coming from a Macan GTS, will the difference be noticeably positive?

I did gen1 Macan S -> gen1 Taycan RWD. I assume your Macan GTS is a petrol one, not an electric gen2?

One aspect that changes a lot the sensations is how much lower one seats. Everything feels faster, more connected to the road.

Another thing is how much more playful the Taycan chassis is. The Macan sticks amazingly to the asphalt, thanks to lots of electronic controlled stability. My lateral-Gs records are similar in both cars, around 1.10G.
But that comes at the price of being and feeling less in control of the drive: if I want to slide a bit my rear tires, the Taycan allows me to do that, quite easily. The Macan would never let the rear dances, even with PSM off.
If you like a lower position, oversteering and countersteering, the Taycan is much more enjoyable.

Here's an animation of what a pro driver does with a Turbo S (in Sport+ and with all aids disabled; source) :

It will be quite simply night and day - TGTS absolutely crushes most of the Porsche line-up - you will not be disappointed (other than missing the aural rasp of the exhaust). Larger car but feels compact once familiar.

The Macan GTS is a great SUV. I had a Macan and have driven most of the lineup. By comparison to the Taycan, the ICE Macan is a horse and buggy.

I have both. No contest in the driving department, but Taycan is not for everyone as it comes to ease of getting in and out and other comforts such as physical controls, so you will have to get used to driving a spaceship basically.

I had a Macan Turbo at launch - 100% faultless in 3 years
My wife has a Macan T for 2 years (new) - 100% faultless - wouldn't pull you out of bed mind!

Maturity has its strengths - Macan EV is plagued with issues which also appeared in the Taycan since launch.

You have to set your own priorities. Between those two, Taycan for pure handling, Macan gives up “some” handling but adds comfort and better usability. I had a Macan S and later a GTS.

I have both and the my GTS ST wins on all fronts - more luggage space and nowhere (other than price) does the Macan excel in this comparison.

The difference will be huge going to a 500 HP 5000lb EV. The Taycan is delightful to drive in all conditions. Straight line speed will push you into the seat. It's also very capable in corners. It takes a while to adjust to how an EV picks up and scrubs it's speed, especially in high performance driving (on a track or mountain road). Often times you're likely carrying too much speed if you drive it like an ICE and expect engine braking. I'm still adjusting to this after 4 months of ownership.

I have had no real issues with either my old Macan or Taycan. When I get a Macan from the dealer during service, I find myself depressed….

I have a Taycan GTS (with RAS and PDCC) and it’s an absolute joy to drive. I’ve had a couple of Macan GTS loaners, which I haven’t got on with - yes it’s a lovely car, but I immediately missed the instant torque, serenity but insanity speed all combined. I initially thought the Macan was super slow, until I remembered it’s was a turbo ICE (like my old RS6!) and if I revved the nuts off it, then yes it really would shift, but then I also felt like a hooligan and couldn’t really enjoy it, unless out on quiet roads. The Taycan however is just so much fun all the time and also so relaxing if you want it to be.

wow, thanks for all the replies. I'm happy to report that I will be a new Taycan GTS owner soon :) I was just having cold feet prior to the switch as I still love my Macan GTS currently. Yes, it's an ICE.
